This is a great recipe for everyday. You can put all sorts of vegetables or different kind of meat, put it together and you lunch is ready.
I came home from work, put this all together, put it in the oven. It is great lunch no much effort needed.
Today I decided to combine chicken with mushrooms, tomato, onion and very special spice tandori masala. It is combination of different spices characteristic for Indian subcontinent. It is usually made of garlic, cumin, coriander, cinamon and other spices or aditives.
Here is the recipe:
- 200gr chicken breast
- 5 mushrooms
- 1 small onion
- 2 cloves of garlic
- 3 small tomatoes
- 2 teaspoons of tandori masala
- 2 spoons of oil
- pinch of salt
Turn on the oven, 200 degrees Celsius or 390 degrees Fahrenheit.
Cut the vegetables and chicken, but not too small. It will bake for almost 40 minutes, you dont want it to desapear. In a cup mix oil, salt and tandori masala. Put a piece of alufoil (half meter) and put the vegetables, and chicken on it. Pour mixture of spices over it. It would be great if you could massage the spices in the chicken, it will taste better. Close the alu ‘package’, and put it in the oven for 40 minutes.
I served it with rise.
I always put timer on my phone for first 30minutes to remind me to prepare the rise. Of course you don’t have to do this, but it is god timing.
