Nettle leaf also contains high levels of protein, calcium, phosphorus, iron, magnesium, and beta-carotene and high amounts of the vitamins A, C, D, and B complex. It is simply clear why it should be included in our diets.
There are various ways to cook nettle, but the most simple one is soup. It only takes 10 to 15 minutes.
Ok lets start from the start. First we have to pick the leaves from the branch, and this is the only time consuming process. But be careful, even though it is picked from the ground, it still can cause that burning sensation, which is not so pleasant. So it should be done with rubber gloves.
After the leaves are picked, they should be washed, and set aside.
In a pot put some oil and minced garlic, before it starts burning put one table spoon of flour. Mix and put drained nettle in. Mix again, and put water. Its hard to determine measures, but from 500gr of nettle there should be 750ml of soup.
Now we add spices, I like it plain so I put just a little bit of salt and pepper.
It should boil for 5min not more, and add some yogurt. It is perfect for spring and summer meals, it is light and refreshing.
